RADICCHIO WITH BLUE CHEESE, HONEY AND WALNUTS

Radicchio Salad with Bleu Cheese, Honey and Walnuts
6-12 perfect leaves of radicchio (the long and pointy kind), washed and dried
2 tablespoons good soft blue cheese
About a tablespoon of honey
¼ cup walnuts pieces (toasted, recipe follows)
In advance: Toast walnuts in dry pan over medium heat, swirling them in the pan, until they begin to release their aroma. Transfer to a plate to cool. Set cheese and honey out to come up to room temperature. Crumble the cheese into a bowl and stir it around with a big spoon until creamy. Add walnut pieces.
Just before serving spread mixture onto each leaf. Drizzle with honey and arrange on a platter.
