Spinach and Strawberry Salad
1 bag spinach
3 Kiwi peeled and sliced
1-pint strawberries, sliced
1 handful chopped toasted walnuts pieces
Dressing
1/4-cup walnut oil
2 tablespoon raspberry vinegar
2 tablespoons raspberry preserves
For Salad:
Arrange spinach on plate, top with Kiwi, strawberries and chopped macadamia nuts.
For Dressing:
Combine oil, raspberry vinaigrette and raspberry preserves, whisk together. Pour on salad just before serving.
To toast walnuts, swirl in dry pan over medium heat until aroma is released. Cool
