Spinach with Brie and Pine Nuts

1/2 cups water
1 bunch fresh spinich washed, and stems removed
4 slices (about 4 ounces) Brie cheese, rind removed
Pine nuts

1.  Bring the water to a boil in a medium saucepan.
2.  Add spinach and boil for about 2 minutes, stirring.
3.  Drain spinach in a colander, squeeze , and then return to warm saucepan.
4.  Add cheese, stirring and blending.
5.  Place in a shallow bowl, because there will be some liquid, and you don’t want running off plate.  Add some pine nuts for a crunchy bite.

Serves 2

The creaminess of the brie with the warm spinach melts in your mouth.
